Baked sweet potato fries with raw truffle mayo

I’m a sweet potato & truffle fanatic... Of course truffle oil which is used in this recipe isn't even close to the real thing but pretty delicious anyway. I know that all chef's and food critics around the world pretty much have one thing in common, hating truffle oil! Haha! By all means, I do prefer real truffles rather than the synthetic (yikes!) oil but the oil is wildly more affordable than the truffles themselves and luckily you'll need no more than a few drops to get the hint of that delicious truffle flavor.

I posted a super duper awesome vegan burger recipe a few weeks back and promised you to share the sweet potato fries in another post, so here you have it!

Baked sweet potato fries recipe

  • 2-3 sweet potatoes
  • 1 tsp olive oil
  • pinch salt
  1. Rinse the sweet potatoes. Cut each potato lengthwise into 4 or 5 pieces, then cut each piece into sticks.
  2. Toss the sweet potatoes in a large bowl with just enough oil to coat. Sprinkle with salt.
  3. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd.
  4. Bake in the oven on 390°F until the sweet potatoes are tender and golden brown, turning occasionally, for about 20 minutes.
  • 2-3 sötpotatisar
  • 1 tsk olivolja
  • en nypa salt
  1. Skölj av sötpotatisarna. Skär dem på längden till pommes frites.
  2. Ha i dem i en stor skål med bara tillräckligt med olja för att täcka pommes friten. Strö över salt.
  3. Sprid ut sötpotatis i ett lager på bakplåten, va noga med att inte lägga dem på varandra.
  4. Grädda i ugnen på 200°C tills sötpotatisarna är mjuka och gyllenbruna, rör runt under tiden, cirka 20 minuter.

Raw vegan truffle aioli recipe

  • 1,5 cup soaked cashews
  • 3/4 cup water
  • 3 tbsp olive oil
  • 1/4 tsp truffle oil
  • 1/2 tsp white-wine vinegar
  • 2-3 tbsp lemon juice
  • 0,5-1 garlic clove
  • 1 tsp agave
  • pinch salt

Soak the cashews for 2-4 hours. Rinse cashews and blend all ingredients in a high speed blender until completely smooth.

  • 3 dl blötlagda cashewnötter
  • 0,7 dl vatten
  • 3 msk olivolja
  • 1/4 tsk tryffelolja
  • 1/2 tsk vitvinsvinäger
  • 2-3 msk citronjuice
  • 1 vitlöksklyfta eller en halv
  • 1 tsk agave
  • en nypa salt

Blötlägg cashewnötterna i 2-4 timmar. Skölj av cashewnötterna och mixa alla ingredienser i en blender till helt slät.
