Raw cinnabun squares

Nothing beats sticky buns hot out of the oven! Except for this raw version maybe! Cinnamon rolls are my favorite things in the whole wide world.

Hey guys! Only one more day until the weekend! I have a small Friday treat for you! Last week I posted the raw mocha squares that were super simple to make and extremely delicious to eat! It became an instant success! And guys, I love, love, love when you send me pictures or tag #happyhealthblog on your creations! My favorite thing about writing this blog is to see my recipes come to life in your kitchens!
So hereby I present the ooey-gooey, sweet, tender raw cinnabun squares with a big portion of rich creamed coconut icing!

It's as easy to make as the mocha squares. Only 7 ingredients. The crust is soft yet a bit crunchy with a cardamom flavor. The cinnabun filling is just a thick layer of gooey super sweet and buttery cinnamon paste. It's really like the middle part of a cinnamon bun all over the thing! And last you have a creamed coconut icing which gives a nice contrast and texture.

Så låt mig presentera den råa kanelbulle rutan med krämig kokos frosting!

De är lika lätta att göra som mocka rutorna. Endast 7 ingredienser. I botten, en mjuk men ändå lite krispigt deg med kardemummasmak. Kanelfyllningen är bara ett tjockt lager av geggig super söt och smörig kanel pasta. Det är verkligen som den mellersta delen av en kanelbulle! Och sist men inte minst, krämig kokos glasyr som ger en fin kontrast och konsistens.

Raw cinnamon bun square recipe

4 x 6 inch form (10 x 15 cm) makes 6-9 small cinnabun squares. Time: 30 min.

Cardamom crust

  • 1 cup cashews
  • 7 dates
  • 1/4 tsp vanilla powder
  • 1 tsp coconut oil
  • 1/2 tsp cardamom
  • pinch salt

Cinnabun filling

  • 1 cup dates (approximatly 15-17dates)
  • 1 tbsp cinnamon
  • 2 tbsp coconut oil
  • pinch salt
  • 1/4 tsp vanilla extract

Creamed coconut frosting

  • 1/4 cup creamed coconut (coconut butter)
  • 1 tsp agave (optional)

(If you don't have creamed coconut you can just mix some coconut oil, agave and some coconut flour. Approximately 1 part oil x 3 parts flour.)

  1. Process all ingredients for the crust in a food processor. Add the dates while processing.
  2. Line an 4x6 inch baking dish with parchment paper. Transfer the mixture to the parchment-lined baking sheet and spread evenly.
  3. Blend the ingredients for the cinnabun filling in a high speed blender or food processor until very smooth.
  4. Transfer mixture on top of the crust and spread evenly. Let it set in the freezer for 15-20 minutes.
  5. Cut out 6 or 9 squares.
  6. Melt the creamed coconut in a dehydrator on 110°F or 42°C then pour it on top of the squares. Let the frosting set in the freezer for a few minutes or enjoy straight away!

Cardemumma botten

  • 2 dl cashewnötter
  • 7 dadlar
  • 1/4 tsk vaniljpulver
  • 1 tsk kokosolja
  • 1/2 tsk kardemumma
  • en nypa salt

Kanelfyllning

  • 2 dl dadlar
  • 1 msk kanel
  • 2 msk kokosolja
  • en nypa salt
  • 1/4 tsk vaniljextrakt

Krämig kokosfrosting

  • 1/2 dl kokoskräm (kokossmör)
  • 1 tsk agave

(Om du inte har kokossmör kan du bara blanda kokosolja, agave och lite kokosmjöl. Ungefär en del olja x 3 delar mjöl.)

  1. Mixa alla ingredienser till botten i en matberedare. Lägg i dadlarna medan du mixar.
  2. Lägg bakpapper i botten på en 10x15 cm:s form. Tryck ut degen i botten av formen.
  3. Mixa ingredienserna till kanelfyllningen i en matberedare tills den är helt slät.
  4. Bred över fyllningen ovanpå botten. Låt kakan stelna i frysen i 15-20 minuter.
  5. Skär den i 6 eller 9 rutor.
  6. Smält kokossmör i en torkugn på 42° C, blanda i agaven och rör om. Häll den sen ovanpå rutorna. Låt glasyren stelna i frysen i några minuter eller njut av dem precis som de är!

Cinnamon buns are the kind of thing you only make a couple of times a year because they are not the healthiest thing in the world. But hey, they taste awesome! And by making this version, you'll skip all the wheat, gluten, dairy and refined sugar!
