Hey guys! This salad is something that I make pretty often. I love sprouts and the best thing about it is that you can just wrap it up in a rice paper, if you're like me and prefer eating your food with your hands! :P
- bell pepper
- red cabbage
Peanut butter dressing
- 1/3 cup roasted peanut butter
- 2 tbsp maple syrup
- 1 tbsp brown rice vinegar
- 1 tbsp sesame oil
- 1 garlic clove
- 1 small piece of red pepper (according to taste)
- 1 medium sized piece of fresh ginger
- 3 tbsp of water
Make the dressing: In a blender, blend the ingredients until the sauce is smooth and creamy. Taste and adjust seasoning if necessary. Sprinkle your salad with some black sesame seeds and serve with a wedge of lime.
