Hey guys!! I'm really enjoying this raw detox week! I'm having so many amazingly delicious and nutritious meals! I find it so funny that people actually believe that vegan food and raw food is limiting, I find it to be the exact opposite! It makes you expand and try new thing! It's also a lot of fun for me to be able to create and share my food with you guy's without having to write super long post's with the exact recipes all the time. Even though I'm sure I will share many of these recipes with you later on anyways! :P
I call these posts "What I ate today!" but it's really what I ate yesterday :P, I photograph and write the posts in the evening and then schedule them for the day after. I really hope you're enjoying this week as much as I am! :p
Breakfast - beet & strawberry smoothie bowl
For breakfast I had a super delicious smoothie bowl! The smoothie was basically bananas, beets and a few strawberries. For topping I used freeze dried strawberries, coconut chips, chia seeds, buckwheat and a passion fruit!
Lunch - raw enchiladas
This lunch was really supposed to be my dinner but my lovely friend invited me for a raw vegan cheese tasting :D!! How awesome is that?! So I decided to eat something more filling for lunch than just salad and then go for the raw vegan cheeses for "dinner".
These enchiladas were sooo extremely delicious and also pretty easy to make! I can't believe that I I haven't done these before! I'm definitely doing it again!
The enchilada wrappers(tortillas) were made by simply blending tomatoes, bell pepper, carrot, onion and ground flax seeds until it thickens up. Spread it out on a nonstick sheet and then dehydrating it for about 2-3 hours until they are pliable. Alternatively, you can spread the mixture on parchment paper and put them in the oven at the lowest temperature.
The enchiladas were filled with a raw sour cream sauce, sprouts, cucumber, tomato, and sweet corn. On top I had some raw tomato sauce and some more sour cream. This meal was prepared under 30 minutes but it took some preparation like making the wrappers and soaking the cashews for the sour cream dressing.
Dinner - raw vegan cheese tasting
Ok guys, as I was saying earlier... Eating vegan or even a raw vegan diet doesn't have to be limiting at ALL! You just have to be open to trying new things! Like raw vegan cheeses made from nuts and seeds!! How cool is that?!
I was lucky enough to try out a bunch of them for dinner yesterday. And you might think, hmm really? Cheeses for dinner?? Hahah Yeeees! These cheeses are made from nuts and seed and they are extremely flavorful and filling... I think we tried over 7 or 8 cheeses, most of them made from cashews. Some almond, some macadamia. My Favorite cheese was the "brie cheese" which actually tasted a lot like the real thing... Another favorite was the smoked cashew cheese which was super delicious with a pretty strong smoky flavor. All these cheeses was ordered from Germany and we had them with different kinds of raw crackers. I really love trying new things and this was the perfect evening for me! :) <3
These cheeses are pretty calorie dense just like real cheeses but a much better option for your body, the animals and the environment...
All the cheeses were delicious and I got some extra cheese with me home that I will use on top of a creamy Alfredo zucchini pasta tomorrow! Yum!
Snack - green juice
I had a simple snack during the day, a green juice filled with good stuff!
