What I ate today - Day 4

Breakfast - green kale & mint smoothie

I did not make this smoothie myself, as you might see from the size of it and the texture! :D Haha, my smoothies are always at least 3 times as big and super smooth and and creamy! Of course that's all thanks to my lovely Blendtec! Anyways, I bought this smoothie at my yoga place and had it for breakfast right before class.


Lunch - Leftover enchiladas and some spring rolls

After yoga I went home to have some lunch in the sun with my cousin. We made some fresh spring rolls and ate some of the left over enchiladas from the day before. We made a super simple ginger peanut butter sauce for the spring rolls!

Dinner - Creamy zucchini pasta with some macadamia cheese

For dinner I just took a Zucchini and put it through the spiralizer. I used some of the leftover cashew sauce from the enchiladas and topped it with some of the cheese that I got from my friends cheese tasting yeasterday! The cheese was delicious and perfect for a raw pasta dish like this!

Snack - Fruit

As for snack I had a small plate of fresh fruits and some frozen blackberries!
